Zucchini Casserole

1 lb ground beef
3 cups tomato juice
1 small onion, chopped
1 tsp basil
salt and pepper to taste
1 medium zucchini
Slice zucchini into 1/4” round circles.

Saute beef, add tomato juice, basil, and mix. Add chopped onion. Simmer 5 min. Add zucchini and cook over medium heat until tender. If tomato juice cooks down, add more water. Zucchini should be covered with liquid at all times. Serve hot.
